Cooking tips

How to grind with a coffee/spice grinder.

No need to remove the husks on Baraka Green Cardamom — they have flavor, too! — just add to the grinder and blend into fine powder.

How to grind with a mortar and pestle.

Remove the seeds from the husks (the husks are a little too fibrous to be broken down by hand) and pound into a fine powder.

How to use whole green cardamom.

Lightly crush with the side of a knife or lightly pound the pods in a mortar and pestle to gently crack them open, then add to dishes to infuse with subtle green cardamom flavor.

Grind with coffee grounds for hot or cold brew.

Add to whole coffee beans before grinding and use to brew hot coffee, or make our rose cardamom cold brew.

Green cardamom is notoriously difficult to farm organically: the flowering is especially vulnerable to weather changes and the fruits are beloved by pests – which is why most farmers use chemical pesticides while growing it. But the few that persist with organic means, like our partner Abraham Chacko, grow a far superior crop.

Baraka is a wild variety of cardamom grown on the Chacko family estate in Udumbanchola, Kerala. It produces pale green pods that are relatively small in size, but significantly richer in flavor, with a lingering fragrance so heady, it perfumes the room.

Much of the cardamom available today is adulterated to extend shelf life, or dyed to give the pods a vibrant green color. The Chackos, in contrast, process their cardamom minimally. After the pods are picked, hand-sorted, and dried to remove moisture and concentrate their sweet, floral nature.

Abraham Chacko has been farming for 20 years now, and follows a mix of biodynamic and low-budget farming methods that prioritize flavor by tending to the well-being of the ecosystem. Their buzzing family estate has cardamom growing alongside pepper vines, coffee bushes, and lots of wild greens, butterflies, and bees.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.
