Cooking tips

Swap in for hot paprika.

Use as a 1:1 substitute for hot paprika. You can also use it instead of sweet paprika or Hungarian paprika, but it will be a little spicier.

Add it to dough of all types.

Mix 2 to 3 teaspoons chilli powder to the dry ingredients for bread, fresh pasta, or dumpling wrapper dough.

Byadgi is a famous variety of Indian chilli, grown in the hot, flat plains of Karnataka. It is known for its deep red colour, low heat levels, and sweet chilli flavour. It is named after the trading town of Byadagi, where the chillies are sold in enormous quantities.

Our chillies are grown by Malleshappa Gulappa Biserotti, an award-winning organic farmer known for his pioneering techniques of soil management, developed in times of water scarcity. His reliance on natural and locally available ingredients has helped build a farming practice that is resilient to unpredictable rainfall.

During harvest season, the fields are dotted with hundreds of chillies, gently ripening on the plants. Malleshapa picks them only after they are fully dried, giving the chillies time to intensify in flavour.

When they are wrinkled dry, the chillies are picked by hand, carefully de-stemmed to remove any bitterness from the stalks, and milled into a vibrant chilli powder, with notes of sweet bell pepper and earthy porcini mushroom.

Byadgi Chilies Love

This is my third chili that I have purchased (Gunter Sannam & sirarakhong are the others). It has an intense red color & so fresh. Mild with a hint of smokiness. Love the flavor. You just can’t find anything as good in a grocery store. It’s a whole different experience & never knew what a real spice tastes like. I often buy two jars to share with a friend❤️ Ps try the cinnamon! You won’t be sorry

Perfect chilli!

I love this chilli, it’s a great heat level—not too hot but so much flavor. I like putting a big heap of this in my curries and then add a little of the guntur sannam for an extra kick. I know everyone raves about how amazing diaspora spices are but there’s a reason! Their spices are the most flavorful versions I’ve ever tried—I didn’t know single spices could have such deep and complex flavors. Each time I try a new spice from them, I’ve been blown away. I highly recommend every single spice I’ve tried from them. I’m really not a review writer but I love this company so much and want to be able to enjoy their products for years to come!

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.
